Lunch Date with Myself

Self Care is so important these days. We’re all trying to come up in the world and constantly hustling to be our best selves that we forget to slow down sometimes. On a random Saturday or Sunday while in college I use to take myself on a “me day” date. I would take myself on a nice lunch somewhere in Atlanta, followed by a movie or maybe a random walking tour of little five points. And it was awesome. Truth be told though, sometimes that could get a tad bit costly, especially as a college students. So sometimes I would have a picnic on the grass on the quad instead.  This post is all about my lunch date with myself. The other day I said to myself, I need a “me day date”. It was a beautiful Sunday afternoon it was a beautiful day outside and I knew I didn’t want to stay indoors on my computer. I decided to take myself on a lunch date in my little backyard. I treated myself to perfect summer shrimp quinoa bowl, frozen bananas & Nutella on a quinoa tortilla and a nice carafe of lemon & mint infused water. Not a bad way to spend a couple hours to myself on a Sunday afternoon, and most of all it was completely affordable.

I’ve been LOVING quinoa bowls this summer. I would buy them from different restaurants for lunch, but in New York that adds up pretty quickly. So I started making my own. Not only was that cost effective, but quite easy as well. I like that I can switch up my choice of meat and as you can see I was craving shrimp. It’s all the more sweeter that the pack of shrimp I picked up from the grocery store was only $6.

Ingredients

  • 1 Pack of Shrimp (shells removed)
  • 1/2 a cup of quinoa (I used tri-color quinoa)
  • 1 cup of sautéed spinach/kale mix
  • 1 1/2 tablespoons of Pico de Gallo (drain liquid)
  • 1 1/2 tablespoons of spicy chipotle mayo

The morning of my wanting to have this lunch for myself, I ran around to various dollar stores looking for a clear glass bowl. Which funny enough proved to be quite a difficult task. Like how hard can it ne finding a clear glass cereal bowl?  I ended up finding the clear glass cereal bowl at Big Lots, for $1.80 plus a 20% off coupon. The flowers and place mat I found at Dollar Tree.

These days I’m drinking pretty much only water. If you didn’t know I have been on a major water challenge. In the beginning of this month, I completely my 3o day water challenge where I drank a gallon of water a day. You can read all about that here. With this July heat, I knew I want a nice glass of water with my lunch. I bought this carafe from a local discount store for only $2. I cut up a lemon, added a few mint leaves and the water chill in the fridge until I was ready to sit down to eat.

Because I have a SERIOUS sweet tooth, I needed something to satisfy my cravings. I have a major love for Nutella and when I found quinoa tortillas at Trader Joes, I knew my snack options would never be the same again. Again because it is summer time, I cut up a frozen banana and placed it on top of the Nutella.

My lunch was SOOOOOOO good, I enjoyed myself sitting outside getting some much needed vitamin D, I ate my lunch in piece accompanied by watching Power! GIRL don’t even get me started on this season.
